12 Meal Ideas for Students

This week I'm bringing you twelve recipes that are suitable for students aka: easy to make, they use inexpensive ingredients, and usually preserve well as leftovers!

I have some allergies (peanuts, tree nuts, sesame) so none of these recipes contain those ingredients. I’m not vegetarian or vegan, but I do think it’s important to have an environmentally conscious diet. Almost all the recipes below that are not vegetarian have available substitutes. 

Here are some of my favourites that I’ve recently discovered. 

1. Chili

This recipe is vegetarian but it’s easy to add the ground beef. Chili is great because most of the ingredients are canned goods which means you can keep them in your pantry for a long time. It also doesn't say to add corn, but I definitely would.

2. Butter chicken

So tasty and easy to make. I usually have this with green beans and mushrooms.

3. Dutch casserole

This one is hard work but it produces great leftovers.

Note: I like to add 1tsp of sambal, 1tbs of tomato paste, 1tsp of pepper and 1tsp paprika to the meat after its cooked. Add 100g of cheese chunks to the potato mash.

4. Bean burrito

Put black beans, sour cream (or plain yogurt), salsa, and grated cheese into a wrap. Fold it in tinfoil and stick in the oven for 12-15 minutes at 325F.

5. Yogurt with fruit, honey, and cereal

This is my go-to breakfast. I usually stick to sliced strawberries or frozen raspberries. And for cereal, my favourite is Just Right!

6. Potato leek soup

This freezes well!

7. Feta and spinach grilled cheese

One of the best things i’ve ever eaten.

8. Babi Kecap (Indonesian pork)

Note: Instead of using mani kecup, I use 4tbs regular soy sauce and 4tbs water.

9. Taco salad

Gonna be honest, I’m not sure what the difference between a burrito bowl and a taco bowl is if the shell/casings aren’t there to distinguish them BUT this is great because there are so many options. You can add basically anything you want to rice: beans, salsa, sour cream, corn chips, cheese, beef, lettuce, corn, veggies, avocado, tomato etc.

10. Beef stroganoff (gluten free option)  

I recently discovered that you can substitute the pasta or the beef for potatoes! 

11. Sautéed veggies

Fry sliced zucchini, bok choy, onion and mushrooms in a frypan with some oil and soy sauce. Serve with rice or pasta and cheese. If you have other veggies that works too.

12. Papas con chorizo (potatoes with sausage) 

Note: I shake a lot of ground cumin onto everything once its all in the same pan. I couldn’t find an online recipe that included it but I swear the cumin is what makes it taste so good! 

I also usually buy any sausage that is available at the store and cut that up, it doesn’t need to be chorizo.
