UeaT Cooking Class: “5 Meals using 5 Ingredients”

It all started with hours of prep work by the Sous Chefs at Chestnut Residence. They brought down all the supplies, knives, pans, spices that we may need. Everybody was on time, the recipes had been tried and tasted and loved, and Sara Lee and Niveen Saleh were ready to lead the class. The theme “5 meals using 5 ingredients” was very appreciated by the students. Who knew that so many different meals could be made from the same five ingredients? The ingredients (cheap, easy to find, local ingredients) were: chicken, chick peas, kale, squash, cheddar cheese.

Together, the 15 students, and Chef Jaco started peeling squash, cutting whole chicken, making chicken stock, cooking chicken, blanching kale, roasting squash and shredding kale. Thankfully, no fingers were lost in the process. :) Everybody was eager to participate, and put in a lot of TLC in the cooking process.

After 2.5 hours of learning about ingredients and pantry items and cooking temperatures, we had five rather huge pots full of incredibly delicious food. What did we make?

1- Butternut Squash Soup topped with Kale Chips
2- Warm Butternut and Chickpea Salad
3- Kale Salad with Cheddar Cheese
4- Chicken Pinwheels with Kale and Cheddar Cheese
5- Moroccan Spinach, Chickpeas and Chicken

After a quick clean up, we all pounced on the food. It was amazing, obviously. Even Chef Jaco and Sous Chef Fitzgerald approved of our hard work. After filling up on healthy yummies, we packed the food to take home for the next day. Yes, there was enough food to take home and feed an army!
